Easy rice bowl

She has a recipe for a DIY vegan mayo which I think is great. So its an extra step but worth it.

Easy Rice bowl

This bowl is easy because there are no rules. I am not good with lots of rules.
Rice bowls are fresh and easy so you can play as you like with the portions of the base ingredients. These

ingredients work well together in any combination. I usually wing it.

I start off by cooking the brown rice. Depending on what you fancy or have in your pantry, brown rice can take a good 45 min to cook.

Brown rice, bring 1-2 cups of brown rice to a boil, then reduce heat to simmer, cook uncovered until water is absorbed and rice is fluffy and tender. set aside while you prep other ingredients.

Quick Salsa (chopped tomato, onion, cilantro, splash of apple cider vinegar)

Organic canned corn, drained and rinsed.

Organic black beans, drained and rinsed.

Salad greens of choice

Avocado diced

Organic sprouted tofu – cut into cubes and tossed with olive oil, fresh chopped cilantro, dash of cumin, chilli seasoning. Toss all ingredients into a hot pan, cook until tofu is browned)

Cucumber Dressing: from Lauren Toyota Hot for food.

1/3 of a cucumber shredder and squeeze as much water out of it is possible

1 cup vegan mayo

2 tablespoons of fresh lemon juice

1 teaspoon of chopped fresh dill

2 teaspoons of apple cider vinegar

2 cloves of garlic

Salt and pepper to taste
